Carolina is a slightly spicy, vinegar-forward sauce, while Western NC is more of a tomato-based sauce with a hint of sweetness. Both are thinner sauces than most folks are used to seeing. Western NC is closer to mainstream sauces but with the NC twist. The best option is a mix of the two. A little sweet heat.
